Gut Healing Apple Cinnamon Pie

Stewed apples are an amazing functional food that help to reduce inflammation, heal a leaky gut and improve immunity. They are surrounded by gut-healing gelatin, which make them a prebiotic and a probiotic.  The flavanoids in apples reduce inflammation in the digestive tract, they also contain pectin which is a soluable fibre that regulates the digestive system and improves bowel movements, and reduces acidity in the large intestine. 

This healthy, refined sugar and gluten free apple slice is an excellent balance of nutrients and easy to make for kids school lunches, or even your own! 

Recipe Base:

  • 65grams melted coconut oil 
  • 1 whole egg
  • 1 cup almond meal
  • 2 tbs xylitol (natural sweetener made from birch)
  • 1 tsp vanilla bean paste
  • pinch of sea salt

Apple Stew

  • 9 small organic apples peeled and sliced (keep the peel it acts as a prebiotic as the apples stew, simply leave the peel in while stewing and remove before adding the gelatin)
  • 1 tsp vanilla bean paste
  • Sprinkle with cinnamon 
  • 2 tbs lemon juice
  • 1/4 cup powdered gelatin (grassfed/organic)
  • 1/2 cup boiling water

Stew apples by themselves until soft by putting in a sauce pan with the lid on for around 15 mins over a very low heat and stir gently. 

Mix in powdered gelatin with the lemon juice and boiling water and stir until smooth.  Stir through the apples and then spread the apple mix over the sponge base and refridgerate for at least 3 hours or until firm.

Slice and eat with coconut yoghurt.
